The Creminelli family has been producing artisan meat products as far back as the 1600s, according to family legend. In more recent history, Grandpa Ugo Creminelli not only produced meat products, but he also served as the personal chef for General Badoglio, the Italian general who took over the government briefly after Mussolini was deposed.

In the early 1970s, Cristiano’s father, Umberto Creminelli, took over the small family business, Salumificio di Vigliano, near the town of Biella at the foot of the Italian Alps in northern Italy. In 1990, Cristiano, who had grown up in his father’s Salumificio, was put in charge of the production. By 1996, he was managing all aspects of the company with supervision from his father and help from his brother.

Cristiano continued to expand the family business and in 2006 the Salumificio was the first meat producer in the province to receive the prestigious Artisanal Excellence award, bestowed by the Piedmont Region and the Slow Food organization. In addition, Cristiano began to set his eyes toward another goal and in the end of 2006 he made the commitment to build Creminelli Fine Meats in America. Creminelli Fine Meats began producing under Cristiano’s supervision in June of 2007 and the results have been astounding for both the family and for the customers.

As far as the production details go, Creminelli carefully selects all natural and organic raw materials including the best cuts of naturally-raised heritage meat. Then they follow a hands-on, one-batch-at-a-time process of artisan curing.

Here at Panzano we carry one of the best salami available, Felino by Creminelli.

Felino is the most ancient salami recipe on record. It is the sister to Prosciutto di Parma because anciently and often still today it is made from the prized trimmings of prosciutto before it is salted. Its mild and accessible flavor makes it a good salami for those new to artisan meats. Felino will generally be the driest of the Artisan Deli salamis because of its small diameter. It works wonderfully for antipasto plates with Parmigiano Reggiano cheese, also originating in Parma.

All of the Creminelli Handcrafted Italian Cured Meats make ideal appetizers, snacks or even special ingredients on pizza. But Felino is simply so good that no matter how you use enjoy it, alone or with cheese and bread, to accompany fresh fruit, or even sautéed in a summer vegetable dish, the experience will be delicious. And although Felino may be the oldest salame recipe, it is still one of the most delectable!
